Grateful today for a kitchen adventure inspired by the following equation:
3 pounds of potatoes + 1 week away coming up = gnocchi!
It’s true… I simply can’t take the chance of anything going to waste.
And I must say, for the first potato gnocchi (I’ve made it with ricotta a few times) this was really delicious. (Scott even volunteered that he likes this better.) And the sauce… absolutely delightful for something created with a concoction of “what’s in the fridge that needs using up before we leave?”
Of course there a lot of extra fluffy little balls of goodness, so the freezer will keep them safe and sound until our return.
